Bruichladdich Single Malt Whisky is made exclusively from unpeated barley grown on 23 different farms in Scotland. After the grains are milled and mashed, they are fermented in the distillery’s original washbacks, which are made of Douglas Fir. The wood from the washbacks absorbs heat generated during fermentation, and allows for a longer, slower fermentation process as compared to steel, resulting in a more flavorful and rich whisky. After fermentation, the wash is distilled twice through Bruichladdich’s 130 year-old, 20-foot tall, diamond-shaped stills. The Victorian-era stills produce whisky that is notably floral and elegant.

Nose: Aroma of green apples, stewed berries and biscuits.

Bruichladdich is living proof that the traditional whisky regions of Scotland make no sense. Please don’t think that labelling a whisky “Islay” has anything to do with taste because the truth is far more complicated and interesting. Built in 1881 when puffer-supplied coal was available as an alternative fuel to local peat, it is likely that Bruichladdich was specifically designed to produce the purest unpeated spirit possible. The great Alfred Barnard supports this view with a tantalising clue – the Laddie is the only distillery on Islay that he does not describe as drying its malt using peat in his fascinating exploration of the island’s distilleries in 1885.
