Catskill Distilling Company’s One and Only Buckwheat Whiskey is distilled from a unique mash bill of 80% buckwheat, with the remainder a mix of corn and malted barley. It is aged for about two years in charred and toasted oak barrels and bottled at 42.5% abv.

Nose: The nose is standard but has the foreshadowing of something better: clarified butter, char, and the aroma of sweet wheat.
Palate: The palate is a nice melange of butter, cinnamon, and caramel.
Finish: The finish shows a little maturity with some wood tannins and wisps of smoke.
Distillery Information
Catskill Distilling Company in Bethel, New York, owned by distiller Monte Sachs, is near the site of the 1969 Woodstock festival. The distillery uses water from the Catskill Mountains and locally grown grains. Catskill Whiskey Company’s spirits are craft distilled and small batch.
